This moist, creamy, and soft chocolate Baileys shortbread makes beautiful dessert for family and friends for any occasion, especially for the holiday season. Amazingly delicious, quick and easy, this sweet salami tastes like heaven! Following, you can find out more about this unique recipe:
- 250 grams unsalted butter
- 180 grams caster sugar
- 320 grams plain flour
- 6 tablespoons good-quality cocoa powder
- ¼ teaspoon baking soda
- 1 ½ – 2 tablespoons Baileys Irish Cream
- Icing sugar, to dust
- Chocolate frosting/ icing sugar/ chocolate shavings, to garnish (optional)
Instructions:
- Preheat oven to 180°C/ 350°F/Gas Mark 4.Grease and line with parchment paper a standard (24 cm) cake tin. Set aside.
- In a mixing bowl, using an electric mixer beat sugar and butter until pale. Next, sift in cocoa, flour, and baking soda. Whisk until well incorporated. Pour 1 ½ or 2 tablespoons Baileys Irish cream (of your choice, depending on how alcoholic do you prefer it).
- Apply the butter into the baking pan and smooth with a spatula; then using a fork – prick all over the batter. Refrigerate the mixture for 10 minutes to chill.
- Next, place in the oven and bake for 25 minutes or just until firm to touch.
- Remove and using a knife score it into squares or rectangles. Cool slightly; remove from pan then cut into pieces.
- Before serving, frost it with chocolate frosting and/or garnish with chocolate shavings or simply dust with icing sugar. This dessert will keep for four days in an airtight container.
