Simple Coca-Cola Cake Recipe (Food Network)


This Coca-Cola cake is probably the easiest and most delicious quick dessert ever! So simple and so creamy! You will need around 40 minutes to make it and taste it! Here is the recipe:


Ingredients:

For the cake:

For the frosting:

  • 12 ounces (1 can) Coca-Cola
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, cubed
  • 3 ½ cups confectioners’ sugar, sifted

Instructions:

To make the cake:

  • Preheat oven to 350°F/180°C/Gas Mark 4, line a 9 by 13-inch pan with aluminum foil and spray with cooking spray; leave aside.
  • In a large bowl, combine flour and sugar; set aside.
  • Next, in a medium saucepan, place the Coca-Cola, cocoa powder, butter, and oil. Bring to a boil over medium-high heat; stir nearly continuously.
  • When boiling, apply liquid over the dry ingredients and combine to incorporate; set aside.
  • Then, add baking soda in buttermilk and stir to dissolve just before adding to the mixture; whisk to combine.
  • Apply the vanilla extract and eggs; whisk to incorporate.
  • Turn mixture out into prepared pan and place in the oven. Bake around 35-40 minutes, or until a tester comes out clean or with a few moist crumbs (no batter). In the meantime, while baking, prepare the frosting.

To make the frosting:

  • In a small saucepan, over high heat, bring the Coca-Cola to a boil and cook around 15 minutes or until fluid is reduced to half cup.
  • And while Cola cooks, over a large bowl – sift the confectioners’ sugar; set aside.
  • After the Cola has reduced, set the heat to medium, and apply the cocoa, butter, and whisk until butter has melted.
  • Pour the butter and Coke mixture to the confectioners’ sugar and combine until smooth. (If the frosting is too thick, add a splash of extra Coke to get it to more pourable consistency.)
  • Apply the frosting over the warm cake. Then, allow to set up before serving.
  • This cake will keep airtight at room temperature or in the refrigerator for up to 5 days.
